Mini Chocolate Chip Cookies

I went grocery shopping after my weight watchers orientation meeting and since I was full of determination and will power, I didn’t purchase a single sweet treat.  Which, of course, was a recipe for disaster since I would subsist on chocolate if it was possible. 

By the end of day two I was thinking about chocolate virtually every minute.  And ice cream.  Ice cream with Sander’s hot fudge to be exact.  In the middle of our latest snow/wind/ice fall, I headed to the grocery store and bought some of each.  Then I called my friend Jennifer to ask if she knew of any good weight watcher dessert recipes.  She shared this one with me and I literally got off the phone with her and started making them.  I made both a gluten free and regular batch and we liked both a lot. 

The only thing I would say about this recipe is that it should be called “Microscopic Chocolate Chip Cookies”.  I followed Jennifer’s advice and made 24 bigger cookies rather than the 48 it called for, which of course doubles the points per cookie.  Even so, they are small.  But they are worth it if you are looking for a low fat but still chocolatey treat.

24 cookies, 2 pp each

Preheat oven to 375

2 T butter, softened

2 t canola oil

1/2 cup dark brown sugar, packed

1 t vanilla

1/8 t salt

1 large egg white

3/4 cup flour (you can use gluten free, which we did and liked)

1/4 t baking soda

1/2 cup chocolate chips

Cream butter, oil, and sugar.  Add vanilla, salt, egg, mix to combine.

In small bowl, mix flour and baking soda.  Stir into batter.  Add chocolate chips, stir to combine. 

Drop 24 smallish teaspoon fulls of dough, bake until golden, maybe 8 minutes?  Or 6?  I can’t remember now.

    I have been away from the the internet community for a couple of months and completely missed out on the news of your newest family member. Mike didn’t even tell me!       Hi Stacey! Thanks for thinking of us! I don’t have a way to subscribe right now, but will check with our friends that set up my web site to see if it’s much trouble for them to do it.
